I’m so excited that our DC metro area is finally experiencing spring! The weather is warm and the trees and flowers are blooming. Praise Jesus for the reminders of new mercies!

I’ve got a brand new recipe for you all, Healthy Green Fruit Dip!

Have you ever noticed that almost all the fruit dips out there are full of sugar and really overpower the fruit? Why would you put tons of sugar on fruit that is already sweet? And why wouldn’t you want something that would complement the fruit and not take over the natural flavors?

This Healthy Green Fruit Dip is just sweet enough, really creamy and indulgent, and has a nice zing of flavor. And there is a sneaky veggie in there! It’s perfect for strawberries, pineapple, peaches, bananas, grapes, berries, and pretty much any fruit you like!

I know it totally sounds weird to have avocado and spinach in a fruit dip, but trust me, you can’t taste them at all. The avocado just adds a beautiful creaminess to the dip and the spinach is so sneaky that as long as it’s super well blended no on will even know it’s there!

Even with the avocado, this Healthy Green Fruit Dip will last in the fridge for about a week, as long as it’s in an air-tight container. You could even pack it in lunch boxes for the kids, or bring it to a party, no one will ever know it’s super healthy!

If you want it to be a little sweeter, add some honey. I would say blend everything up first and taste it, then if you want it to be sweeter add honey a tablespoon at a time until it’s as sweet as you like. And if the kiwi is too much of a zing leave it out and replace it with some honey.

You can use fresh raw spinach in this recipe. However, raw spinach has oxalates (anti-nutrients) which can lead to kidney stones and can stop the absorption of calcium and other minerals.

To reduce the anti-nutrients, I just blanch the spinach. It’s pretty simple to do. Boil spinach until it turns bright green, then quickly remove it from the boiling water and put it into an ice bath. This will stop the cooking and help the spinach stay bright. Dry and try to wring out as much moisture as possible before adding it to the rest of the ingredients.

This Healthy Green Fruit Dip is paleo, keto, gluten-free and dairy-free, clean, vegan, and Whole30. It’s amazingly creamy and delicious, and so dang healthy!

Quick Tip: Here is my tip for making anything that calls for the cream from the top of a full-fat can of coconut milk (like mousse, whipped coconut cream, etc...). The night before you are planning on using the coconut milk, place it in the refrigerator right-way-up (meaning you can read all the words without doing a head stand, even if you are a yoga genius). Then when you are ready to use the cream, gently remove the can from the fridge and slowly and gently flip it over so the bottom is now the top. Then open the can and slowly pour off the clear liquid and save for using in smoothies or whatever. The cream is now all at the bottom and you can just scoop it out.

Green Fruit Dip

Quick and easy fruit dip.

Ingredients

  • 1 cup baby spinach
  • 1 can full-fat coconut milk (just the cream - see note)
  • 2 avocados, peeled and pitted
  • 2 kiwis, peeled
  • 3 tablespoons coconut oil
  • 2 tablespoons orange juice (optional, for added sweetness)
  • juice from one lime

Instructions

  1. Blanch the spinach by putting it in some boiling water then removing it and putting it into an ice bath as soon as it turns bright green. Dry it off as much as possible before blending. (This step is optional, but it does help to minimize the anti-nutrients in the spinach.)
  2. Put all ingredients into a food processor or blender and pulse until well blended.
